Mild Green Chile Fajitas
Pre-cut 1-2 lbs of chicken or pork into 1/2″ wide strips. Season with salt and pepper. Add 1 tbs oil to a large nonstick skillet and heat on high. Add meat in batches, cook until golden brown (about 3-4 minutes) and remove. Repeat until all meat is thoroughly cooked.
Place all meat back in skillet, add sauce, and on medium heat cook for 2-3 minutes with occasional stirring.
Serve on a warm tortilla with shredded cheese and onion. Accent with a squeeze of fresh lime & fresh chopped cilantro if desired.
